Ackee and saltfish
This beloved Jamaican delicacy combines the unique flavors of ackee, a tropical fruit, with salted codfish to create a dish that is both savory and satisfying. With its colorful presentation and robust flavors, Ackee and Saltfish is a true taste of the Caribbean.
Ingredients:
1 pound salted codfish
1 can (19 oz) ackee, drained and rinsed
1 onion, sliced
1 bell pepper, sliced
2 cloves garlic, minced
2 tomatoes, diced
2 tablespoons vegetable oil
1 teaspoon thyme leaves
1/2 teaspoon black pepper
Scotch bonnet pepper (optional, for heat)
Fresh cilantro or parsley for garnish
Instructions:
Soak the salted codfish in cold water overnight or for at least 6 hours to remove excess salt. Drain the water and rinse the fish.
Place the codfish in a pot of boiling water and simmer for about 20 minutes. This will further remove excess salt and soften the fish. Drain the water and set the codfish aside to cool.
Once the codfish has cooled, flake it into small pieces, removing any bones or skin.
In a large skillet or frying pan, heat the vegetable oil over medium heat. Add the sliced onion, bell pepper, and minced garlic. Sauté until the vegetables are softened and slightly golden.
Add the diced tomatoes to the skillet and cook for a few minutes until they start to soften.
Gently fold in the flaked codfish, ackee, thyme leaves, black pepper, and Scotch bonnet pepper (if using). Be careful not to break up the ackee too much.
Reduce the heat to low and cook for about 10 minutes, stirring occasionally, until all the flavors have melded together and the ackee is heated through.
Taste the dish and adjust the seasoning if needed. Remember, the salted codfish provides a salty taste, so additional salt may not be necessary.
Remove from heat and garnish with fresh cilantro or parsley.
