Bunny Chow is a popular South African street food that originates from Durban. It features a loaf of bread hollowed out and filled with a hearty curry, typically made with lamb, chicken, or beans. It’s the perfect comfort food for sharing.
Ingredients:
4 small loaves of white bread (preferably unsliced)
500g chicken, beef, or lamb (cubed)
1 large onion, chopped
2 tomatoes, chopped
2 tablespoons curry powder
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon turmeric
1 tablespoon ginger, minced
2 cloves garlic, minced
1 cup vegetable broth
Salt and pepper to taste
Instructions:
Heat oil in a large pot and sauté onions until golden.
Add garlic and ginger and cook for 2 minutes.
Stir in the curry powder, cumin, coriander, turmeric, and cook for another 2 minutes to release the spices' aroma.
Add the chopped tomatoes and cook until they soften.
Add the cubed chicken, beef, or lamb, and cook until browned.
Pour in the vegetable broth, season with salt and pepper, and let it simmer for 20-25 minutes, or until the meat is tender and the sauce has thickened.
Cut the loaves of bread in half and hollow them out, leaving a small base.
Fill the bread with the curry mixture, then serve hot.
