Adobo is a beloved Filipino dish known for its savory, tangy, and slightly sweet flavors. Made by simmering chicken or pork in a blend of soy sauce, vinegar, garlic, and bay leaves, Adobo is a dish that's as comforting as it is flavorful. It’s considered a national dish of the Philippines and is perfect with steamed rice.
Ingredients:
1 kg chicken thighs or pork belly (or a mix)
1/3 cup soy sauce
1/3 cup white vinegar (or apple cider vinegar)
5 cloves garlic, minced
2 bay leaves
1 teaspoon black peppercorns
1 medium onion, sliced
1 tablespoon sugar (optional)
1 cup water or chicken broth
2 tablespoons cooking oil
Optional Garnish:
Sliced green onions or fried garlic
Instructions:
Marinate the Meat:
In a bowl, combine the chicken or pork with soy sauce, half of the minced garlic, and black peppercorns. Mix well and marinate for at least 30 minutes, or up to overnight in the refrigerator.
Sear the Meat:
Heat oil in a large skillet or pot over medium heat. Sear the marinated meat in batches until browned on all sides. Set aside.
Sauté Aromatics:
In the same skillet, add more oil if needed, and sauté the onions until soft and translucent. Add the remaining garlic and cook until fragrant.
Simmer the Adobo:
Return the seared meat to the skillet. Add the vinegar, bay leaves, water or chicken broth, and any remaining marinade. Bring to a boil without stirring to prevent a raw vinegar taste.
Lower the heat and simmer uncovered for 30-40 minutes, stirring occasionally, until the meat is tender and the sauce has slightly thickened.
Adjust Seasoning:
Taste the sauce and adjust seasoning by adding sugar if you prefer a touch of sweetness, or more soy sauce for saltiness.
Serve:
Serve hot with steamed rice, garnished with sliced green onions or fried garlic for extra flavor.
