Ingredients:
2 cups long-grain parboiled rice
3 large tomatoes, blended
1 medium onion, chopped
1 red bell pepper, blended
1 tablespoon tomato paste
1 teaspoon thyme
1 teaspoon curry powder
1 teaspoon paprika
1 teaspoon garlic powder
1 tablespoon vegetable oil
2 cups chicken or vegetable broth
Salt and pepper to taste
Instructions:
Rinse the rice thoroughly and set it aside.
In a pot, heat oil over medium heat. Add onions and sauté until softened.
Add blended tomatoes, red bell pepper, and tomato paste. Cook for about 10 minutes until the mixture thickens.
Stir in thyme, curry powder, paprika, garlic powder, salt, and pepper. Let it cook for another 5 minutes.
Add the rice to the pot and mix it with the tomato sauce.
Pour in the broth and bring to a boil. Once boiling, reduce the heat, cover, and simmer for 20-25 minutes until the rice is cooked through and fluffy.
