Ingredients:

  • 8 ounces elbow or rigatoni pasta

  • 1 lb cured ham cubed (optional)

  • 4 tablespoons butter

  • 1/4 cup all-purpose flour

  • 2 cups milk

  • 2 cups shredded cheese (cheddar or a combination of your choice)

  • 1/2 cup grated Parmesan cheese

  • 1/2 onion, chopped

  • 1 clove garlic, minced

  • 2 tablespoons mayo

  • 2 bay leaves (optional)

  • 1/2 teaspoon paprika

  • 1/2 teaspoon cayenne pepper (adjust according to heat preference)

  • Salt and pepper to taste

  • 1/4 cup bread crumbs (optional, for topping)

  • Chopped fresh parsley for garnish

Instructions:

Step 1: Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook until al dente according to the package instructions. Drain and set aside.

Step 2: Prepare the Cheese Sauce: In a separate saucepan, melt the butter over medium heat. Add the paprika, bay leaves, and cayenne pepper to the sauce. Stir in the flour and cook for a minute until it forms a smooth paste (roux). Gradually whisk in the milk, ensuring there are no lumps. Continue to cook and stir until the mixture thickens and comes to a gentle simmer.

Step 3: Sauté Onion and Garlic: In a pot, sauté the chopped onion, minced garlic, and ham cubed until they are fragrant and lightly golden. Add the cooked pasta to the pot and stir in the mayo, ensuring the pasta is coated evenly. Reduce the heat to low.

Step 4: Combine the Pasta and Cheese Sauce: Pour the pre

pared cheese sauce over the pasta in the pot and stir until well coated. The creamy sauce should cling to the pasta, creating a luscious mac and cheese.

Step 5: Bake and Serve: Preheat the oven to 375°F (190°C). Transfer the mac and cheese mixture to a greased baking dish. If desired, sprinkle bread crumbs over the top for an added crunch. Bake for about 20-25 minutes, or until the top is golden brown and the cheese is bubbling. Remove from the oven and let it cool slightly. Garnish with chopped fresh parsley for a pop of color.
