Okonomiyaki
Okonomiyaki is a Japanese savory pancake that combines shredded cabbage with a light batter and your choice of toppings like pork, seafood, or cheese. It’s topped with okonomiyaki sauce, Japanese mayonnaise, and bonito flakes, creating a delightful medley of textures and flavors.
Ingredients:
1 cup all-purpose flour
1/2 cup dashi (or water)
2 large eggs
3 cups finely shredded cabbage
1/2 cup sliced green onions
100g thinly sliced pork belly or cooked shrimp
2 tablespoons vegetable oil
Okonomiyaki sauce (store-bought or homemade)
Japanese mayonnaise
Bonito flakes and seaweed flakes (nori), for garnish
Instructions:
Prepare the Batter:
In a large bowl, whisk together the flour, dashi (or water), and eggs until smooth.
Add shredded cabbage and green onions to the batter, mixing until evenly coated.
Heat the Pan:
Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium heat.
Cook the Okonomiyaki:
Pour half the batter into the skillet, spreading it into a round pancake shape about 1 inch thick.
Lay slices of pork belly (or cooked shrimp) on top of the batter.
Cook for 4-5 minutes, then flip carefully and cook for another 4-5 minutes until golden brown and cooked through. Repeat with the remaining batter.
Add Toppings:
Spread okonomiyaki sauce generously over the pancake. Drizzle with Japanese mayonnaise in a zig-zag pattern.
Sprinkle with bonito flakes and seaweed flakes.
Serve:
Cut into wedges and serve hot.
