Pad Thai is a classic Thai dish known for its sweet, sour, and savory flavors. It's quick to make and perfect for a weeknight meal, with stir-fried noodles, shrimp or chicken, and a tangy tamarind sauce.
Ingredients:
200g rice noodles
200g shrimp or chicken, peeled and deveined
2 eggs, lightly beaten
3 tablespoons tamarind paste
2 tablespoons fish sauce
1 tablespoon sugar
1 teaspoon chili powder
2 tablespoons vegetable oil
1 cup bean sprouts
3 green onions, chopped
1/4 cup roasted peanuts, crushed
Lime wedges for garnish
Instructions:
Soak the rice noodles in warm water for 20 minutes or until softened. Drain and set aside.
In a small bowl, mix tamarind paste, fish sauce, sugar, and chili powder. Set the sauce aside.
Heat oil in a wok or skillet over medium-high heat. Add shrimp or chicken and stir-fry until cooked through. Remove and set aside.
In the same pan, pour the eggs and scramble lightly. Add the soaked noodles and stir to combine.
Pour the tamarind sauce over the noodles and toss until evenly coated.
Add the cooked shrimp or chicken, bean sprouts, and green onions. Stir-fry for 2 minutes.
Serve hot, garnished with roasted peanuts and lime wedges.
