Piri Piri Chicken is a fiery, flavorful dish that uses a spicy marinade made from piri piri (bird’s eye) chili peppers. This dish is popular in Mozambique and Portugal, and it’s perfect for grilling or roasting.
Ingredients:
1 whole chicken, spatchcocked (or chicken pieces)
4-6 piri piri chilies (or substitute with bird’s eye chilies)
3 cloves garlic, minced
1/4 cup olive oil
1/4 cup lemon juice
1 tablespoon smoked paprika
1 teaspoon ground cumin
1 teaspoon ground coriander
Salt and pepper to taste
Instructions:
In a blender or food processor, combine piri piri chilies, garlic, olive oil, lemon juice, paprika, cumin, coriander, salt, and pepper. Blend until smooth.
Rub the marinade all over the chicken, making sure to get into all the nooks and crannies. Marinate for at least 2 hours (overnight for the best flavor).
Preheat the grill or oven to medium heat. If grilling, cook the chicken for 30-40 minutes, turning occasionally, until the skin is crispy and the meat is cooked through.
If roasting, place the chicken in the oven at 375°F (190°C) for 45-50 minutes, or until the chicken is golden and cooked through.
