Ingredients:
2 lbs pork shoulder, cubed
1 onion, quartered
4 garlic cloves
3 dried ancho chilies
3 dried guajillo chilies
1 can (25 oz) hominy, drained
Salt and pepper to taste
Toppings: shredded cabbage, radishes, lime, and oregano
Instructions:
Boil the pork with onion, garlic, and salt for 2 hours, skimming off foam as necessary.
Toast and soak chilies in hot water, then blend into a smooth paste.
Add the chili paste and hominy to the pot. Simmer for 30 minutes.
Ladle into bowls and top with cabbage, radishes, lime juice, and oregano.

Serve with warm tortillas or crispy tostadas for dipping, and enjoy with a glass of agua fresca.
