Sos Pwa : A Hearty Bean Soup

Sos pwa

Haitian Sos Pwa, a delightful bean soup. This traditional dish, prepared with either black or pinto beans, is brimming with rich flavors and aromatic spices. In this recipe, we'll explore two methods for preparing this delectable soup: Option 1, which utilizes a pressure cooking method for a quicker result, and Option 2, featuring a slow-cooking process for a more traditional approach. Whichever method you choose, your taste buds are in for a treat. Let's dive into the recipe!

Ingredients:

  • 2 cups dried black or pinto beans

  • Water (for soaking and cooking)

  • 3 tablespoons cooking oil

  • 1 onion, diced

  • 3 cloves of garlic (2 minced, 1 whole)

  • 1 Scotch bonnet pepper (optional, adjust according to your spice preference)

  • 2 tablespoons salt (or to taste)

  • Parsley (for garnishing)

  • White rice (for serving)

  • Protein of your choice (optional, for serving)

Instructions:

Option 1: Pressure Cooking Method

Step 1: Washing and Pressure Cooking the Beans

  1. Rinse the dried beans under cold water to remove any impurities.

  2. In a pressure cooker, add the beans, 1 minced garlic clove, 1 tablespoon of salt, and enough water to cover the beans by about 1-2 inches (pay attention to the max line on the pressure cooker).

  3. Secure the lid and cook the beans on medium pressure for 30-45 minutes, depending on your desired tenderness.

  4. Allow the pressure to release naturally before opening the cooker.

Step 2: Blending and Straining

  1. Once the pressure has been released, remove half of the cooked beans from the pressure cooker and set them aside to cool.

  2. Transfer the remaining beans along with the cooking liquid to a blender and blend until smooth.

  3. Pass the blended mixture through a strainer to remove any lumps or solids. Set aside.

Step 3: Preparing the Soup

  1. Warm up a pot over medium heat and add the cooking oil.

  2. Sauté the diced onions and minced garlic for 2-5 minutes until the onions turn translucent and fragrant.

  3. Stir in the blended bean mixture and let the soup simmer for an additional 15-20 minutes to allow the flavors to meld together. Optional: Add a Scotch bonnet pepper for a spicy kick.

  4. Season with salt to taste.

Step 4: Serving

  1. Serve the Haitian Sos Pwa soup hot with a side of white rice.

  2. You can also pair it with your choice of protein, such as chicken, beef, or seafood (stewed or grilled).

  3. Garnish with parsley for added freshness.

Option 2: Slow-Cooking Method

Step 1: Washing and Soaking the Beans

  1. Rinse the dried beans under cold water to remove any dirt or debris.

  2. Place the beans in a large bowl and cover them with water. Let them soak for 1- 2 hours to soften the beans and reduce the cooking time.

Step 2: Slow Cooking the Beans

  1. Drain the soaked beans and transfer them to a large pot.

  2. Add enough water to cover the beans by about 2 inches.

  3. Bring the pot to a boil over medium-high heat, then reduce the heat to low and partially cover with a lid.

  4. Allow the beans to simmer for about 1 hour, or until they are tender and soft to the touch. Stir occasionally.

Let cool and Follow step 2 from Option 1 to blend half of the cooked beans with the cooking liquid and strain the mixture.

Whether you choose the quick pressure cooking method or the traditional slow-cooking approach, this hearty soup will warm your soul and delight your taste buds. Don't forget to serve it with white rice and your preferred protein to complete the experience.
