Thai Fried Rice, or "Khao Pad," is a simple yet flavorful dish made with fragrant jasmine rice, protein of your choice, and a blend of soy sauce, fish sauce, and lime. It's a go-to comfort food in Thailand, often enjoyed as a quick and satisfying meal.

Ingredients:

  • 3 cups cooked jasmine rice (preferably day-old)

  • 2 tablespoons vegetable oil

  • 2 large eggs, beaten

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 200g shrimp, chicken, or tofu (your choice), diced

  • 2 tablespoons soy sauce

  • 1 tablespoon fish sauce

  • 1 teaspoon sugar

  • 1/2 cup green peas or diced carrots

  • 2 green onions, chopped

  • 1 lime, cut into wedges

  • Fresh cilantro and cucumber slices, for garnish

Instructions:

  1. Prepare Ingredients:

    • If using shrimp or chicken, season lightly with salt and pepper.

    • Break up any clumps of cooked rice to ensure even frying.

  2. Cook Protein:

    • Heat 1 tablespoon of oil in a large wok or pan over medium-high heat.

    • Add shrimp, chicken, or tofu, and stir-fry until cooked through. Remove and set aside.

  3. Scramble the Eggs:

    • In the same pan, add the remaining oil. Pour in the beaten eggs and scramble them until just set. Push to one side of the pan.

  4. Sauté Aromatics:

    • Add onions and garlic to the other side of the pan. Sauté until fragrant and slightly golden.

  5. Combine Ingredients:

    • Add the cooked rice, soy sauce, fish sauce, and sugar to the pan. Mix well to coat the rice evenly.

    • Stir in the cooked protein, green peas or carrots, and green onions. Stir-fry for 2-3 minutes until heated through.

  6. Garnish and Serve:

    • Serve hot with lime wedges, cucumber slices, and a sprinkle of fresh cilantro.

Serving Suggestions:
